Description

The dome shape of the lid mimics the curve of a traditional bread oven, so that the moisture inside the pan stays constant. The result is a firm, airy loaf of bread with a deliciously crunchy crust.
Emile Henry developed the special ceramic material used for this pan. It is sturdy and scratch resistant so you can cut the bread directly in the pan without any issues. The pan can go from the refrigerator into the oven or the microwave without any issues, it does not have any problems with big temperature changes.
